SUCCESS







Brief update on Cinco De Mayo. The potluck was very nice. I had a nice plateful of various Mexican type casseroles. The caramel pie with bananas went over very well, I didn't have to bring a darn thing home. The pharmacist tracked me down after lunch and asked for the recipe for the banana pie. When I told about the slow cooker and the rest of the recipe to him he was dumbfounded. You mean I can cook the canned milk in crock pot and store the cans on a shelf? Then we got to talking recipes and he mentioned a cookie recipe he had seen demonstrated with cajeta used as a filling. I'm thinking THUMB PRINT COOKIES and I better go purchase some more canned sweetened condensed milk.

Yes the pie is cold but can stand to come up to room temperature, it has a very thick caramel pudding like consistency. My whipped cream "melted" fairly quickly.
And yes you could use a tart pan and I would make a pastry crust instead of the graham cracker crust at the pastry crust won't crumble into bits. Retro

One more thing regarding whipped cream. I am going to try a container of mascarpone cheese whipped with a cup of cream. I think that will hold up nicely to the caramel pie. Next time I make one will probably be for Christmas potluck. Retro

Be careful with the Mascarpone, its made from "Kalbslab" - can not translate this - but generally it is very delicate - as in "damage-able" (if this word exists). It is not allowed to be too old and I think it has difficulties with temperature. And speaking of mascarpone Tirmisu at least must be mentioned, here raw eggs are used, so better trust the cook.
If I meet your younger brother again I will greet him with a hearty "Hello Sailor!" :)
